V- Easy Meal For Those Who Don’t Cook.

I don’t enjoy cooking. Mainly because I don’t have the patience for it.  I like instant gratification and mixing, stirring, adding ingredients, and actually cooking or baking things, doesn’t lend to my kind of personality. Generally, there is no instant gratification in the mathematics of the cooking process.   Therefore,  if I am not going out to eat at a Vegan restaurant, I am usually eating popcorn for dinner.  It’s fast, crunchy, relatively healthy, and easy to make.

Today, I made myself a real lunch….from food in my fridge.  It is such a rare event for me and I am so impressed with myself I thought I would tell you all about it.

The ingredients:

Firm Tofu

Olive Oil

Soy Sauce (l use low sodium)

Avocado

I had some firm tofu in the fridge and an avocado that had a short lifespan left and needed to be used.  So I decided to fry the tofu in a pan with a little olive oil and soy sauce…getting it nice and brown on both sides.  and then simply garnish it with the fresh avocado.  I wasn’t expecting much from this quick meal, but I was pleasantly surprised at how tasty and filling it was.  Putting the avocado on top of the warm tofu was so yummy.  A great combo.

Best of all it was as close to instant gratification cooking as one can probably get.  It took about ten minutes from start to finish.

So if you are lazy,  or hate the time-consuming act of cooking, and prefer to be instantly gratified…this might just be your perfect homemade meal.
