Lazy + Delicious Buddha Bowl

Yesterday on #LunchBreakLIVE I made a super healthy (low-fat) and totally delicious lazy ass buddha bowl.  I say lazy because I have no patience in the kitchen and like things done fast! But I still want good taste (who doesn’t!).

I showed Jane Velez-Mitchell a thing or two in the kitchen as well.  LOL.  Check out the video and watch how easy it is to be vegan.  Also…find out who is really the boss in our kitchen!

I also used my air fryer (which I love).  Here is a great site that gives their reviews/research on the best air fryers, if interested.

RECIPE:

One block firm or extra firm tofu preferably pressed.

Couple Handfuls of raw broccoli

4 whole mushrooms

Rice of your choice

Spinach or mixed spinach and kale

Dressing:

Store bought hummus (or make your own if you’re not lazy like me)
Hot sauce (I use chipotle red pepper)
Water
Nutritional Yeast
Braggs Aminos

In a small bowl combine About two heaping spoonfuls of hummus
Slowly Add some water then stir till you get a thinner consistency. Add more water as needed. Shouldn’t be too thin… but thin enough for a dressing consistency
Add couple squeezes of braggs
Pour in about 3 tablespoons of nutritional yeast (or more if desired)
Pour in desired amount of hot sauce
Mix thoroughly

Set aside for now

Cut tofu in cubes. Lightly spray with oil. (Or omit oil if you choose) Put tofu in air fryer at 390 degrees for about 20 minutes

Boil broccoli till desired tenderness then drain.

Water sauté sliced mushrooms and add greens at the end. Sauté together till greens shrink down.

Cook rice in intstant pot (or stove top)

Combine all neatly in a bowl. Pour dressing over and sprinkle with chipotle chili powder.
